Sassy Potato Corn Chowder

It's been a while since I posted a new recipe.....I saw this one on the Kraft site and thought it looked pretty good...I love potato soup anyway so I was anxious to try this version. It's a little thicker than normal potato soup but it's delicious...and very easy to make!

Sassy Potato Corn Chowder

Ingredients:
4 slices OSCAR MAYER Bacon, chopped (we just used whatever bacon we had)
1 can (14 oz.) fat-free reduced-sodium chicken broth
1-1/4 lb. baking potatoes (about 3), peeled, cubed
1 pkg. (10 oz.) frozen corn, thawed, drained
2 stalks celery, sliced (didn't use)
1/2 cup chopped onions (didn't use)
1/2 cup MIRACLE WHIP Light Dressing
2 Tbsp. flour
2 cups milk

Directions:
Cook bacon in large saucepan until crisp. Remove bacon from pan; drain on paper towels. Discard drippings from pan.

Add broth and vegetables to saucepan. Bring to boil; simmer on low heat 15 min. or until potatoes are tender.
Mix dressing and flour in medium bowl. Stir in milk. Add to potato mixture; cook 3 to 5 min. or until heated through, stirring constantly

**We actually just put the potatoes, corn, broth, & uncooked bacon in the pot and let boil until the potatoes were coooked, then added the rest of the ingredients. Also, we like to season with salt. **

5 Months


We've been married 5 months today!! I'm trying to plan a trip for us next month for our 6 month anniversary and also because we never got to take a honeymoon...and it'll be on Valentine's Day too. Seems like good enough reason to take a trip!!  Anyone have any ideas of places to go that's not too expensive....oh and we don't have passports so no out of the country???

The Greathouse of Pizza

Last night we decided to try a new restaurant since it's been a while. We pass The Greathouse of Pizza every time we go to Pizza Hut yet we've never tried it....until last night. When we walked in the girl told us the menus were on the table. I was waiting for us to ask how many when I saw the board that said seat yourself. When we sat down and started looking at the menu we were amazed at how different this place was. Yes they had the normal pasta, sandwiches, etc and the normal pizza toppings but the specialty pizzas were alot different than we had seen before.

Sausage, Pepperoni, Mushroom, Onion, & Green Pepper
Bacon Cheeseburger Pizza
Beef, Onions, Pickles, Bacon, Drizzled with Ketchup and Mustard with Mozzarella Cheese on Pan Crust.
BBQ Chicken Pizza
BBQ sauce, Grilled Chicken Strips, Bacon, Onions, and Mozzarella Cheese.
Taco Pizza
Beef, Cheddar and Mozzarella cheese cooked. Cold Lettuce, Tomatoes, Onions,Taco Sauce and more Cheddar Cheese on top. (JalapeƱos optional)
Chicken, Broccoli, and Cheddar Pizza
Grilled Chicken Strips with Broccoli, Cheddar and Mozzarella Cheeses.
Chicken Alfredo Pizza
Grilled Chicken Strips with Alfredo as the sauce with Parmesan and Mozzarella Cheeses on Pan Crust)
Hawaiian Pizza
Ham, Pineapple, Onions and Mozzarella Cheese.
Vegetarian Pizza
Tomatoes, Black Olives, Green Olives, Onions, Green Peppers and Mushrooms with Light Mozzarella Cheese.
Meat Pie
Sausage, Beef, Pepperoni, Ham, & Bacon.
The Hen House
Chicken, pepperoni, mushroom, onion, and green pepper
The Ranch House
Chicken, bacon, ranch dressing, cheddar and mozzarella cheeses
The Steak House
Pan crust, alfredo sauce, Italian beef, onions, mushroom and green pepper
The Smoke House
bbq sauce, beef, bacon, onions, pickles and cheddar cheese.
The Fire House
Sausage, Pepperoni, Jalapeno, pepperoncini peppers, and a dash of hot sauce
La casa di Italia
(Italian meats) New York style crust, Italian beef, Italian sausage, pepperoni, and salami
Buffalo Chicken Pizza
grilled chicken tossed in hot sauce, onions, ranch dressing, and mozzarella cheese
Spaghetti pie
pan crust, spaghetti sauce, noodles, mushroom, onion, mozzarella and parmesan cheese

Talk about decisions!!
 
We decided to get a small BLT pizza for Brandon and a small Ranch House pizza for me. One thing I didn't like about this place was you had to go up to the counter to order. We like being waited on. :) We got our food and once we tried it, we thought it was really good. We'll definitely go again!

Let it Snow, Let it Snow, Let it Snow

Today we woke up to more snow...way more than the last time! I was dreading coming to work but I didn't want to call in so I left the house extra early and made my attempt to work. After almost 50 minutes of driving (when it normally takes 30) I finally made it. It's still snowing here and this afternoon is supposed to get even worse so I'm crossing my fingers for an early dismissal. On these days I wish I worked at school because they're all closed today...boo :(    I wasn't able to get any pictures b/c my camera battery is dead but as soon as I get it charged I'll try to share some.
