Sassy Potato Corn Chowder

It's been a while since I posted a new recipe.....I saw this one on the Kraft site and thought it looked pretty good...I love potato soup anyway so I was anxious to try this version. It's a little thicker than normal potato soup but it's delicious...and very easy to make!

Sassy Potato Corn Chowder

Ingredients:
4 slices OSCAR MAYER Bacon, chopped (we just used whatever bacon we had)
1 can (14 oz.) fat-free reduced-sodium chicken broth
1-1/4 lb. baking potatoes (about 3), peeled, cubed
1 pkg. (10 oz.) frozen corn, thawed, drained
2 stalks celery, sliced (didn't use)
1/2 cup chopped onions (didn't use)
1/2 cup MIRACLE WHIP Light Dressing
2 Tbsp. flour
2 cups milk

Directions:
Cook bacon in large saucepan until crisp. Remove bacon from pan; drain on paper towels. Discard drippings from pan.

Add broth and vegetables to saucepan. Bring to boil; simmer on low heat 15 min. or until potatoes are tender.
Mix dressing and flour in medium bowl. Stir in milk. Add to potato mixture; cook 3 to 5 min. or until heated through, stirring constantly

**We actually just put the potatoes, corn, broth, & uncooked bacon in the pot and let boil until the potatoes were coooked, then added the rest of the ingredients. Also, we like to season with salt. **

Velveeta Vegetable Cheese Soup

It's been raining the last few days so last night we decided that vegetable soup would be good to fix for supper. I've never made it before so I searched online for a good recipe. I went to my trust Kraft website & found Velveeta Vegetable Cheese Soup...it looked delicous so this is what we "attempted" to make.


What the picture was on the website, ours didn't look like this at all. And of course I forgot to take a pic when ours was done.

Ingredients:
1 pkg. (16 oz.) frozen broccoli, cauliflower and carrot blend (we used a pkg of mixed veggies we had)
2 cans (14 oz. each) fat-free reduced-sodium chicken broth
3/4 lb. (12 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up (we just used shredded cheese)
*Our added items*
Cut up steak fries to add potato flavor
Chicken breast, cut into pieces

Directions:
Place vegetables, & broth in large saucepan...we also added our fries & chicken and put salt, pepper, & some seasoning in it; cover. Bring to boil on medium-high heat. Reduce heat to low; simmer 10 min. or until vegetables are tender.


Mash vegetables with potato masher to desired consistency. (We omitted this step)

Stir in Velveeta; cook 5 min. or until cheese is melted and soup is heated through, stirring frequently.

*We didn't put the cheese in the actual soup ever, we just added to our individual bowls. Overall, it was really good...even though we changed the recipe a bit.*
